Well I failed to blog the rest of my days while in Texas. Not because I didn't want to but simply because I forgot. There was a lot going on with the murder of Vinnie's cousin and now the passing of my aunt. Overall I am doing okay but stress is definitely there just from the sadness of it all.
Each day I have felt really guilty about the way I have been eating. Our big meal of the day have all been delicious and I totally enjoyed them .. to the point of not considering my health when I dipped my portions out. Last night's dinner was the best as far as health goes. We had salmon and salad and I did have a biscuit with it.
The other meals each day were also okay. My healthy cereal for breakfast, light lunches such as a sandwich on whole wheat and mustard or a veggie pizza. Most of my snacks were fresh fruit. And then came the banana pudding.
I knew without a shadow of a doubt that I wasn't going to be good with that. I ended up having 3 servings a day for 2 days straight. Then after that I had a small slice of lemon pie a couple days in a row. Not to mention the bites of fudge once in a while. Geez, I did better than this over the holidays.
I can't blame it on anyone but me although I can try to say it's Mom's fault. LOL Every time I get around her I get all excited about food. She and I both love to cook and try new recipes so that seems to be our main focus throughout our entire visit. Other than knowing that I have probably gained this last week and half, I wouldn't have it any other way. I really enjoy spending all this time in the kitchen with her.
So early in the morning we head back home. Mom is cooking breakfast for us (no grits or gravy this time) and then we are off. I still have our Nutri Grain bars and Granola Bars in the car for our snacks and I still have some G2 to drink on the way home. Hopefully I will be wise again on the trip.
I generally weigh in on Monday mornings with a group of friends of mine and we all report in to each other. I think I am going to walk a couple times a day and do my other exercises the rest of this week before I have to weigh next week.
Weight is always a struggle. How we handle it is up to us.

Day 3 in Texas
Day 3 has a lot going on. Last night Mom received a phone call from her brother. His 19 year old granddaughter had married a Marine in Dec and moved to California. Yesterday her husband killed her and today he confessed to it. Today my sister calls and tells me that my aunt is in the hospital in stage 4 renal failure. At stage 5 she will need dialysis and she is refusing it. She said she is ready to go "home". This is my mother's oldest sister. So today is not a good day for happiness and fun.
My breakfast this morning was Honey Bunches of Oats with 2% milk and a banana. Then Vinnie and I went to the store so I could get the things I needed to make my healthy cereal. I also went to the health food store to get the flax seed and between the 2 places I replenished my iron, multi vitamins, multi-minerals, and vitamin K. I ran out of all of these things several weeks ago and really needed to get back on them. I am hoping it will help me get my energy back.
We also bought some 100% Whole Wheat bread for our lunches here. I had a peanut butter and banana sandwich and a tangerine for lunch. I am drinking my green tea here like I make at home. Tonight will not be too healthy. We are having country ham, eggs, grits, biscuits, and gravy for dinner and I am not even going to pretend that I won't eat too much. At least the rest of the day was good so far.

Traveling
Traveling isn't an easy way to eat healthy and make wise decisions. I wasn't sure at first how I was going to do it but then realized that if I just stayed focused I could, at the minimum, make better choices than I normally would have.
I went to the story before we left and bought G2's for me to drink. G2 is Gatorade's Diet drink. There are carbs in the drink but only 5 per 8 oz serving and it allows me to stay off the soft drinks and put something needed into my system like electrolytes. I also bought Granola Bars and Nutri Grain Bars to have for snacks while we were traveling if we got hungry between meals.
Yesterday was our travel day. We stopped at IHOP for breakfast and all I could picture in my mind was all their sugary meals. I had no clue what I would be able to eat but knew there wouldn't be anything "healthy" available. I decided to order a basic breakfast. Eggs, bacon, hashbrowns and whole wheat toast. I ate the eggs, 1 slice of bacon (giving vinnie the other slice), part of the hashbrowns leaving a small portion on my plate and also left 1/2 a slice of toast. I want to break myself of feeling like I have to clean my plate every time I eat. I walked away feeling good although there were a lot of fat in my meal. I had reduced the amount I ate, chose whole wheat for the toast instead of white, and opted not to get any of the sugary sweet delectable choices that were in front of me.
For lunch we stopped at Cracker Barrel. I opted for one of their low carb salads. I ate on it the entire time vinnie ate his meal and then some and I swear there was no bottom to that salad. LOL I finally stopped, ate a few slices of the fried apples vinnie had and didn't want and called it lunch. So far so good.
For dinner we decided to do a quick fast food stop so we could reach our destination before it got too late. His parents tend to go to bed early. So I chose Wendy's and had a cheddar and bacon potato with their boneless chicken wings. A new item they were advertising and it looked really good. Then I realized that some big wig in the corporate office said "let's take our yucky chicken nuggets and instead of providing a dipping sauce for it, let's cover the nuggets in the sauce for them and call it boneless chicken wings!!" Of course the others thought it was a good idea and now you know the rest of the story. Needless to say I only ate a couple of them when I decided I shouldn't torture myself like that anymore. LOL
Arriving at Mom and Pop's was a relief. It was great seeing them again and relaxing a bit with them before unloading the truck and getting ready to call it a night. Mom and I went to the kitchen and she offered me a glass of milk and some pecan toffee. I ate a little of it and then chose to eat a tangerine instead of more sweets. Bed was so relaxing and I had a good night's sleep.
This morning was as usual. The 4 of us sitting around the kitchen table drinking coffee and then having breakfast. Pop brought out the Jimmy Dean' sausage, egg, and cheese biscuits from the freezer and cooked them in the microwave. I ate one of them and then had a grapefruit instead of a second biscuit.
Then Mom put a roast in the slow cooker with mushroom soup and onion soup. She said we would make some creamed potatoes and green beans with it and have some rolls for dinner tonight. It will be so good I will really have to be strong to make myself limit my portions.
More later. Time to get a shower and head back downstairs. Vinnie and Pop left to go to the movies and I don't want to leave Mom sitting alone.

The Day Before the Trip
So much is going on today. First thing this morning I went to meet some friends and deliver the donations I collected for their niece. She had been burned out of her home and they lost everything. So my sister in NC and myself in SC notified our friends and collected what we could to help them get started again.
The right early this afternoon the lady from the Raleigh Maine Coon rescue home delivered 2 sweet young cats to my home. We are going to transport them to Mississippi to be picked up by the final transport team and taken to their Forever Home.
Vinnie has been doing laundry all day so we can get things packed later. I took care of those 2 things and got dinner cooking in the slow cooker. I just love being able to use a slow cooker for an entire meal while I am doing other things. It helps me to utilize my time so much better.
I ate a Sausage Egg McMuffin and hashbrown from McDonald's with orange juice for breakfast. Not what I had planned but had to make the delivery and we were all meeting at McDonald's where they were grabbing breakfast before heading out again. So I ate with them.
For lunch I had a ham sandwich on whole wheat bread with mustard. Then later I had fresh fruit and nuts for a snack.
Dinner will not be exactly healthy. But it will be good and I will not be over eating. I only cooked 4 servings and there are 2 men and me eating it. I always serve them more so I will be eating a proper amount.
This is another new recipe I am trying. It is called Cheesy Italian Tortillini. I can't report on how good it tastes but I can say how good it smells. I am reminded all day as it cooks.
After dinner, we will get our showers and then pack everything and load the truck for our trip. We plan to leave at 4:00 am. Noticed I said "plan to leave?" That is because I am NOT a morning person. Vinnie will have his hands full trying to wake me up at that time.
Going to rest now .... I am going to need it.

Breakfast this morning is 1/2 grapefruit, 2 boiled eggs, and 1 slice of whole wheat toast with Promise Light margarine. I am drinking coffee with Sugar Free French Vanilla creamer as I do every morning.
I will be meeting someone soon to deliver donations for a fire victim. She will continue to Atlanta and deliver the items collected. Then I have several errands I have to run in preparation for our trip to the in-laws.
I am cooking a Cajun Beef Stew for dinner tonight in the slow cooker. So it can be cooking while I am out running around. I guess I should get off here and get started with the beef stew now.

Great Start!
Today was a great day! I ate my healthy cereal combo for breakfast (actually lunch since I got up so late). I knew I had to make myself be active so I cleaned out the truck and loaded the items that have been collected for the fire victims. Their aunt is coming through here on her way to Atlanta and I am going to meet her so she can take it down to her.
I took a rest and then Megan and I started looking through my cookbooks and deciding what we wanted to cook. I even picked out 2 recipes for the next 2 days as well. Then I took Nike for a walk. The path I take isn't very long, maybe about a 1/2 mile or so but I make sure I keep a fast pace and the last leg back is all uphill. I am generally panting by the time I get back. Just knowing that I had done it made me feel good.
Dinner tonight was a Hot & Sour Shrimp Stir Fry. This recipe was really good and Megan did the cooking. Can you believe it? I actually let someone else cook in my kitchen? LOL
I know that each night after we are all relaxed we tend to have some sort of dessert and if we don't have it, we usually end up making a sandwich or something. So tonight we made a fruit salad. One grapefruit, one navel orange, one tangerine, one green apple, one red apple, some golden raisins, and a few walnut pieces all mixed together with a little mayonnaise. I realize that mayonnaise is fat but the amount is small especially compared to what I usually eat at this time. Plus, the stir fry was very lean as well. And the fruit and nuts are all healthy items.
So today is January 1, 2010 and a brand new start on taking care of ME!
I took a rest and then Megan and I started looking through my cookbooks and deciding what we wanted to cook. I even picked out 2 recipes for the next 2 days as well. Then I took Nike for a walk. New Year's
It is now New Year's Eve. I am not going out this year. Vinnie is working so I am having a quiet night at home.
My eating lately hasn't been wise. Today it was better. I put thought into my choices and feel better about it. I still have a long way to go before I can say I have my eating habits under control. It's a constant struggle, especially when each day is different. There is no set schedule since I am not going to work.
We are leaving for Texas early Monday morning. Mom and I both love to cook and share recipes with each other. She is already buying the ingredients to make my glazed salmon steaks. We aren't sure what we will be serving with it at this time but I am sure we will come up with something.
My blog tonight is short. Happy New Year to everyone!
