Tonight was the Italian Chicken I talked about yesterday. Mmmmmm it really is delicious. I actually don't care much for chicken breasts because it tends to be dry and doesn't hold much flavor for me. I would much prefer the darker meats like the legs and thighs. But this particular method is a true exception.
With the chicken we had herb seasoned whole grain wild rice and French cut green beans with almond slivers. I left the table feeling good about what I had eaten. Between the healthy cereal meal, a banana for a snack, a lean ham sandwich on whole wheat bread with mustard and cheddar cheese for lunch, and then supper, I knew that my entire consumption today was much better than it use to be.
I still haven't done anything about exercising. I think I will wait and work that in next week. It will give me a few days to actually rest, which is something I rarely do.
